Abstract
Food waste is one of the main environmental challenges of the 21st century. If the world’s food waste is integrated into a country-level ranking of top emitters, food wastage would appear the third. Globally, the total amount of food waste in 2007 occupied almost 1.4 billion hectares, equal to approximately 28 percent of the world’s agricultural land area. Again globally, the economic cost, based on 2009 producers’ prices, of the total amount of food waste in 2007 was totalled about USD 750 billion. An online grocery retail, Ocado, is aiming to estimate the total footprint of salad waste in partnership with the Cardiff Business School (CARBS) and Waste and Resources Action Programme (WRAP). CARBS, as the lead organisation in this project, will bring unique expertise to the project so that a methodology can be developed to estimate the total wasted food and packaging generated from the Ocado salads supply chain and the impacts of those wasted materials on CO2-equivalent emissions and blue water footprint. The project will first model the Ocado salads supply chain process map with a special focus on waste management. Then, this model will be tested for several salads products. As a last step, a sensitivity analysis of the model will enable us to identify potential approaches that Ocado can take to reduce the total food and package waste across their salads supply chain.
